Pumpkin Syrup

It's said that the arrival of Fall is marked only by when this coffee syrup is released by the Green Siren . This syrup spawns a frenzy each year.
It's debated whether Starbucks syrup contains any actual pumpkin...or any wholesome sweeteners for that matter. Last time I checked, most store-bought syrups still contain high-fructose corn syrup.
But do not despair, here's a wholesome recipe:

This recipe is inspired by the flavors you would find in pumpkin pie yet slightly altered so that it can be used as a flavoring in coffee drinks.
ProTip: Try this sweetener to a Cortado and a dollop of cacao infused whipped cream.
Ingredients
| 340 g | water | |
| 225 g | white sugar | |
| 115 g | dark brown sugar | |
| 50 g | canned pumpkin puree | |
| 1 tsp | cinnamon | |
| 0.5 tsp | nutmeg |
Directions
- In a medium saucepan, add all ingredients except the pumpkin pure.
- Heat on medium until the sugar dissolves. Whisk intermittently.
- Once dissolved, add pumpkin puree and whisk until everything is incorporated.
- Turn off heat, let the saucepan cool.
- Store in a squeeze bottle or your container of choice.
